Delicious raw recipe – Raisin Chutney

I have been eating this the last few days and it is yummy.  Others have tried and loved it.  It has a distinctly Christmas feel to it, must be the orange peel.

Blend everything together in a food processor –

1 cup of raisins (soaked if not very soft)
1 apple or pear
1 jalpeno (I used a  green capsicum)
1 table spoon of ginger (fresh is best but I used powdered)
1 tablespoon of  fresh orange peel chopped (I used the peel of a whole orange)
2 teaspoons Garam Marsala
Salt to taste

I made these to go with it –

Sprouted Lentil Croquettes

2 cups of sprouted lentils
1/2 cup of Olive Oil
3 cloves garlic
1-2 tablespoons of cumin powder
1 cup sunflower seeds soaked for a few hours
Salt or Shoyu to taste
1/2 cup of ground flax seeds (just realised I totally forgot about these!)

Blend first 6 ingredients, then pulse in the flax seeds meal, let it sit to thicken and form into patties.  The recipe says to then dehydrate until crunchy, but I just kept the mixture in the fridge and served up a couple of dollops for lunch every day this week!
